To the nose, it is at first vivid and full-bodied, has candied-fruit notes ( apple, apricot and bush peach ) framed by honey and a hintof brioche. The fruit character then gives way to attractive aromas of almond and roasted nuts, accentuated by the intense heat finish. On the palate, the attack is rounded and generous with candied flavors. Delicate vanilla notes together with a nicely integrated touch of wood combine harmoniously with notes of candied fruit.
Martell Cordon Bleu Intense Heat
Martell Cordon Bleu Intense Heat blend will go through special finish into casks which have been intensely heated. In the darkness and silence of the Martell cellars, the eaux-de-vie gently slumber. Days, months, years pass. Sleepy-eyed and lazy, time rolls on. But a beautiful transformation is taking place inside the oak barrels. As a living material, the oak wood provides the eau-de-vie with its structure and handsome amber color. Indeed, it is the wood that
helps the eau-de-vie develop the last stage of its aromatic personality. Usually the eaux-de-vie are matured in oak barrels burnt very slightly. For this limited edition, the eaux-de-vie will finish their ageing in oak barrels intensely burnt. The action of burning the oak barrels from the inside to release
aromas is called the « Bousinage » .
Throughout the tasting, this blend exhibits its full subtlety, structure and balance. The notes first detected on the nose are reprised successively in the finish, complemented by attractive toffee, coffee, even mocha flavors that are beautifully sustained.
